Chickpea, Cabbage and Cheese pasta


This rather simple recipe is healthy and great too if your veggie, don't forget to be adventurous and add/remove things to your taste. You could even chuck some nuts in this dish.
 
Chickpea, Cabbage and Cheese pasta
  • ·         Large handful Cabbage chopped
  • ·         A good glug of olive oil
  • ·         Zest of one lemon
  • ·         Juice of one lemon
  • ·         200g of cooked chickpeas
  • ·         Any type of pasta
  • ·         Pinch of salt
  • ·         Pinch of black pepper
  • ·         100g cheese, finely grated (hard cheeses go better but we’re on a budget remember so your normal cheese will have to do
Blanch the cabbage for 1-1½ minutes. Drain well. Heat the olive oil in a pan and fry the cabbage for a few minutes, stirring constantly. Whilst doing this cook the pasta according to packet instructions. Drain the pasta and stir it into the cabbage with the remaining ingredients but reserving half the cheese. Serve the pasta with the remaining cheese scattered on top.
