Speedy Student Aloo Paratha
This take on an Indian classic might not be as good as the real thing, but will do till you can go to a restaurant.
What you need is:
- · 1-2 large potatoes peeled and cut in quarters
- · ½ tsp Garam Masala
- · Salt to taste
- · 1 garlic clove crushed
- · 1 tsp crushed ginger
- · Fresh or powdered chili to taste
- · 1 small onion diced small
- · 2 tortilla wraps
- · Small nob of butter or tsp Oil
Boil the potatoes and drain when cooked. Add all the ingredients except for the tortilla wraps and mash together adding salt and chili to taste. Once mashed well, spread on and sandwich between the two wraps. Pan fry the wraps in a little butter for 1-2 minutes on each side and serve.
